I stumbled across this recipe last fall and LOVE it. It's perfect for this time of year when the weather gets chilly and it only takes about 30 minutes! I hope you try it and enjoy!
2- 14oz cans reduced sodium chicken broth
2c. chopped onions
1- lg baking potato peeled and cubed
1-16oz bag frozen peas
1/4tsp- salt
1/4tsp-pepper
Combine broth onion and potato in a large saucepan, cover and bring to a boil. Cook uncovered until the potatoes are fork tender (8-10 mins). Stir in the peasand bring to a simmer. Reduce the heat and cook until the peas are bright green (about 5 mins)
Remove the saucepan from the heat and let the soup cool for 5 mins,
Pour the soup into a blender in batches and puree. Return soup to the saucepan and stir in salt and pepper. Cook over high heat,stirring, just until heated through (1-2 mins)
Serves 4
